Prosecco is a late-ripening varietal grown in the hills of Treviso in the region of Veneto (near Venice, Italy) to make the gentle and very enjoyable sparkling wine, Prosecco. The municipality of Valdobbiadene is the prime area of real estate to grow and make the best Prosecco. The hills are terribly steep and face the south. So the vineyards see adequate sun, are well drained and well ventilated by the gentle breeze from the Adriatic Sea. The end result is a fine light-bodied sparkling wine with bright crispy fruit, a bouquet of apples, citrus and flowers, with a surge of acidity to be sipped anytime during the day or can be paired well with many appetizers or fish dishes.
